Even if you haven’t liked Brussel sprouts in the past, you will LOVE this!

Ingredients
- 2 lbs fresh brussel sprouts washed, trimmed, halved
- 2 medium green onions chopped finely
- salt and pepper to taste
- 1/4 cup coconut oil melted
- zest of 1 lemon
- 1 granny smith apple cored and chopped
- 1 cup pecan pieces
- 1/3 tsp thyme

Instructions
- Heat oven to 350F.
- Spray 13x9 inch baking dish with coconut oil, or line with parchment paper. Spread brussel sprouts evenly in dish.
- Top with green onions and salt and pepper to taste.
- Place spoonfuls of coconut oil evenly over brussel sprouts.
- Bake uncovered for 30 minutes.
- Remove and add lemon zest, apple, p!ecans, and thyme. Stir to combine.
- Return to oven and bake an additional 15-20 minutes, until brussel sprouts and apple pieces are tender. Enjoy!
