  1. In a bowl or stand mixer, cream together the butter, coconut oil, sweetener of choice.
  2. Add the eggs, vanilla and almond extract. Mix until incorporated.
  3. In a separate bowl, combine baking soda, salt, almond flour and coconut flour.
  4. With the mixer running on low add the flour mixture to the creamed ingredients, 1 cup at a time, beating well after each addition.
  5. Form the dough into a ball with your hands and place on a sheet of plastic wrap.
  6. Form the dough into a disc and cover with plastic wrap. Refrigerate for at least 30 minutes, but can also be overnight.
  7. Preheat the oven to 350 degrees.
  8. Line 2 baking sheets with parchment paper.
  9. Sprinkle a clean, flat surface with coconut flour and roll the dough out until it is ΒΌ inch thick.
  10. It may be easier to place the dough in between 2 pieces of parchment paper to roll the dough out.
  11. If the dough gets too warm from rolling out you can always put in the fridge to cool before cutting the cookies.
  12. Cut the cookies using your cutter of choice. Work quickly so the dough stays cold.
  13. Using a spatula transfer the cut cookies to the baking sheets.
  14. Gather the remaining scraps into a ball and roll out dough. Repeat rolling and cutting cookies until all dough is used.
  15. Remember, If the dough gets too warm stick it back in the fridge to cool.
  16. Bake the cookies for 13-15 minutes until lightly golden brown.
  17. Cool completely before frosting!
