Grain Free Coconut Wraps

Great Lakes Unlfavored Gelatin is a wonderful brand
In a large bowl or stand mixer combine arrowroot, coconut flour, baking soda, and salt with a spoon.
In a separate bowl, add 2 tablespoons of warm water to 2 tablespoons gelatin until gelatin is wet.
To this mixture, add 4 tablespoons of hot water and whisk vigorously until it turns to a thick, sticky paste.
Whisk in coconut milk.
With your hand held mixer or stand mixer on low speed, pour wet ingredients into dry ingredients.
Melt coconut oil in a skillet. Using a ¼ cup measure or scoop, pour batter into skillet and swirl in a circular motion.
Flip in 2-3 minutes or when batter starts to bubble. If the wrap does not want to flip, it needs to cook longer.
Flip and cook for an additional minute.
This recipe makes approximately 11 wraps. Fill with lettuce and organic lunch meat, chicken salad, cashew butter, turkey bacon, etc. The Healing Plan approved possibilities are endless!
