Ingredients
- 8-10 carrots chopped
- 3 white or sweet onions chopped
- 1 tbsp arrowroot powder
- 2 tbsp water
- salt and pepper to taste
- 3.5 pound beef chuck roast
- 2 tbsp worcestershire sauce
- 2 sprigs fresh rosemary or 1 tsp dried
- 2 springs fresh thyme or 1 tsp dried

Instructions
- Add chopped carrots and onions to crock pot.
- Mix arrowroot powder and water to combine, and pour over vegetables.
- Salt and pepper both sides of roast and lay on top of vegetables.
- Pour Worcestershire sauce over meat.
- Cover and cook on low for 5 hours.
- Add fresh or dried rosemary and thyme and cook an additional hour.
- Check for doneness (165F) with a meat thermometer. Remove meat, slice, and serve all ingredients together using sauce in bottom of crock pot as a dipping sauce.
