Ingredients
- 1 1/2 lbs wild caught salmon (6oz per person)
- 1 tsp dried dill
- 1 tsp sea salt
- 1 tsp ground black pepper
- 1/4 cup coconut oil melted
- 2 lemons zested and sliced
- 2 bunches swiss chard

Instructions
- Pre-heat oven to 425F and grease a baking dish or line with parchment paper.
- Rinse salmon, pat dry and cut roughly 6 oz fillets.
- Sprinkle salmon with dill, salt, and pepper. Zest lemon over fish and top with melted coconut oil.
- Remove what is left of the rind from both lemons and slice evenly. Place lemon slices on top of fish.
- Remove stems and ribs of swiss chard to make the leaves more flexible. Wrap each salmon fillet with 2 leaves of swiss chard.
- Sprinkle with more sea salt if desired. Place on baking dish and bake for 15-17 minutes.
