Instructions
  1. Cut fish into 1/4 inch pieces and place in a glass dish with lime and lemon juice, onions, garlic, and optional stevia, stirring to coat.
  2. Cover and refrigerate 3-4 hours, preferably overnight. Stir occasionally to allow even “cooking” of fish.
  3. When ready to serve, chop cilantro and dice avocados, radishes and red pepper. Separate endive or romaine into single leaves.
  4. Scoop ceviche into the leaves, using the leaves as wraps. Top with cilantro, avocado, radishes, red peppers, and sea salt to taste.
