Ingredients
- 1 head cauliflower chopped into florets
- 1 tbsp coconut oil
- 1 onion chopped
- 2 cloves garlic minced
- 2 tsp sea salt
- 1 tsp ground pepper

Instructions
- Use a food processor to pulse cauliflower florets into rice texture, taking care not to over-process.
- Melt coconut oil in sauce pan and sauté onion and garlic for 3 minutes, until onion is translucent.
- Add “rice” and sauté for an additional 4-5 minutes. Season with salt and pepper.
- Use as a meal base for chicken or fish, and top with a sauce of your choice!
