This broccoli salad with cranberries is a wonderful recipe for a main meal or side dish and is a favorite at barbecues and get-togethers. Simply add chicken to make it a complete meal! Can be prepared one day in advance.
Serves roughly 4 people if adding chicken, or about 8 people if using as a side dish.

Ingredients
- 4 pieces turkey bacon
- 1 tbsp coconut oil
- 1/3 cup homemade mayo find the recipe in the sauces section
- 3 tbsp organic full fat yogurt or coconut cream
- 1 tbsp apple cider vinegar
- 4 drops stevia optional
- 1/4 cup red onion finely chopped
- 1/3 cup pecans toasted and chopped
- 4 cups broccoli florets chopped (save stalks for smoothies!)
- 1/3 cup unsweetened cranberries or raisins
- salt and pepper to taste

Instructions
- Cook turkey bacon in coconut oil. Set aside to cool, then crumble.
- Prepare mayo or use pre-made.
- Combine mayo with yogurt, vinegar and optional stevia in a medium bowl.
- Toss in turkey bacon crumbles, and remaining ingredients.
- Stir to mix evenly and refrigerate 1 hour before serving. Can be prepared one day in advance.
