  1. Season meat with sea salt and Bragg’s seasoning.
  2. Sear all sides of meat in a skillet with coconut oil. Place in slow cooker.
  3. Add chopped onions, carrots and celery to slow cooker along with water, vinegar, bay leaf , and additional salt if desired.
  4. Cook on low for 6 hours.
  5. Remove bay leaf and discard.
  6. Mix lemon, zest, garlic, and parsley in bowl.
  7. Place cooked shanks and veggies in bowl. Drizzle with broth from slow cooker.
  8. Garnish with lemon, garlic, and parsley mixture. Freeze any extra broth in ice cube trays to use later for sautéing vegetables.
