Instructions
  1. Preheat oven to 400F.
  2. Spray muffin tin with coconut oil spray, or line with cupcake liners.
  3. Sift dry ingredients together.
  4. Place wet ingredients (eggs through vanilla) together in a stand mixer and mix until smooth, or place in a bowl and whisk by hand.
  5. Slowly mix dry ingredients into the wet ingredients, blending continuously.
  6. Fold blueberries in and stir by hand to combine.
  7. Scoop batter into muffin tins until half full.
  8. Bake for 16-18 minutes, until toothpick inserted in the center comes out clean.
  9. Let cool for 5 minutes, then remove from muffin tin and cool on a rack. Store in an airtight container.
