Ingredients
- 1 15 ounce can black beans
- 5 large free-range eggs divided
- 1 tbsp pure vanilla extract
- 2 tsp powdered stevia
- 1/2 tsp sea salt
- 6 tbsp unsweetened cocoa powder
- 1 tsp baking powder
- 6 tbsp unsalted grass-fed butter OR 5.5 tbsp coconut oil
- 1 cup plus 2 tbsp erythritol

Instructions
- Preheat oven to 350F.
- Grease a 9-inch cake pan with coconut oil or butter.
- Line cake pan with parchment paper, and then grease the parchment paper. (To be clear, grease the pan, lay down parchment, and then grease the parchment. This makes it easier to get the cake out.)
- Alternatively, you can make cupcakes. If you’d like to bake the batter as cupcakes, line 16 cupcake tins with paper liners.
- Drain and rinse beans in a strainer or colander. Shake off excess water.
- Place beans, 3 of the eggs, vanilla, stevia and salt into blender or food processor.
- Blend on high until beans are completely liquefied. No lumps!
- Whisk together cocoa powder and baking powder.
- In a bowl, use a mixer to cream the butter or coconut oil with erythritol until light and fluffy.
- Add the 2 remaining eggs to this butter mixture, beating for a minute after each addition.
- Add to the bean mixture and blend to incorporate.
- Finally, add the cocoa powder and baking powder and blend the batter on high for one minute, until smooth.
- Scrape the batter into the cake pan or the cupcake liners.
- If you are baking the cake as a single round layer, bake for 40-45 minutes.
- If you are baking as cupcakes, bake for 35 minutes.
- Cake is done when the top springs back when lightly touched in the center.
- Remove the cake to a cooling rack and cool for 10 minutes.
- Turn out the cake from the pan, and flip over again onto cooling rack.
- Let cake cool until it reaches room temperature.
- Top with frosting of choice or whipped cream! Store cake or cupcakes in the refrigerator.
