Ingredients
- 1 ripe banana mashed
- 2 free-range eggs whisked
- 2 tbsp flaxseed meal
- 1/4 tsp pumpkin pie spice
- 1/4 tsp cinnamon
- 1/4 tsp vanilla extract
- 1 tbsp coconut oil
- optional toppings: homemade whipped cream, berries, organic maple syrup

Instructions
- Whisk together mashed banana and eggs in a bowl.
- Add flaxseed meal, seasonings and vanilla extract. (Alternatively, add all ingredients to a blender and blend until smooth).
- Melt coconut oil in a pan.
- Pour large spoonfuls of batter into pan and cook each side for approximately 30 seconds, or until center of “pan-fake” starts to bubble.
- Remove from pan and cook remaining batter.
- Top with toppings of choice and serve.
- “Pan-fakes” can be frozen and warmed later.
